SERVES 6 | PREP TIME 15 Min | COOK TIME 4 Hours 15 Min
3-4 cups of roasted turkey, chopped
1 green bell pepper, chopped
1 red onion, chopped
4 garlic cloves, minced
2 cans (14.5 oz) diced tomatoes, undrained
1 can (16 oz) kidney beans, rinsed and drained
1 can (15 oz) black beans, rinsed and drained
1 can (14.5 oz) chicken broth
1 can (6 oz) tomato paste
2 cups frozen corn
1 tablespoon chili powder
1/2 teaspoon black pepper
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
Salt and pepper to taste
Optional garnishes
shredded Monterey jack cheese
chopped cilantro
sour cream
tortilla strips
Add all ingredients (except garnishes) to a 5-quart slow cooker and stir to combine.
Cover and cook on low for 4 hours or until heated through. Top with your favorite garnishes. Serve and enjoy!
COOK'S NOTES: You can use 1 pound of ground turkey fried in 1 tablespoon of extra virgin olive oil, in place of the roasted turkey.
